Honeydew & Lemongrass Freezer Jam

Honeydew & Lemongrass Freezer Jam

Makes about 5 (8 oz) half pints

For the taste of summer with a twist, combine honeydew melon, lemongrass and lime with sugar and Ball® RealFruit® Instant Pectin. Enjoy today or freeze for up to one year.

You will need:


1-1/2 cups sugar
5 Tbsp Ball® RealFruit®  Instant Pectin
4 cups crushed honeydew melon (about 1 3-lb melon)
2 Tbsp finely chopped lemongrass
Zest and juice of 1 lime
5 Plastic Ball® (8 oz) Freezer Jars

Directions:

1.) STIR sugar and instant pectin in a bowl until well blended.
2.) ADD melon, lemongrass, and lime zest and juice. Stir 3 minutes.
3.) LADLE jam into clean jars to fill line. Twist on lids. Let stand until thickened, about 30 minutes. Refrigerate up to 3 weeks or freeze up to 1 year.
